Kidney Bean Salad

Ingredients

  • 2 cups cooked kidney beans
  • 1 shredded carrot
  • 3 scallions, diced (green and white parts)
  • 1/2 red capsicum, diced fine
  • 1 tbsp olive oil
  • juice of 1 lemon
  • 1/2 tsp chili powder or smoked paprika
  • pinch pf cayenne
  • 1 smashed garlic clove
  • 2 tbsp chopped fresh parsley
  • salt and pepper, to taste

 

Method

Mix all the ingredients together, adjust seasoning to taste. Best if chilled for at least an hour before serving. 4 servings.
