Kidney Bean Salad

Ingredients
- 2 cups cooked kidney beans
- 1 shredded carrot
- 3 scallions, diced (green and white parts)
- 1/2 red capsicum, diced fine
- 1 tbsp olive oil
- juice of 1 lemon
- 1/2 tsp chili powder or smoked paprika
- pinch pf cayenne
- 1 smashed garlic clove
- 2 tbsp chopped fresh parsley
- salt and pepper, to taste

Method
Mix all the ingredients together, adjust seasoning to taste. Best if chilled for at least an hour before serving. 4 servings.
