Spiced Beetroot Salad

Ingredients
- 6 cooked beets, peeled and diced (best if roasted, but boiled is fine too)
- juice of 1 lemon
- 1 tbsp. olive oil
- 1/2 tsp ground cummin
- 1 tsp smoked paprika
- 1/4 tsp cinnamon
- salt and pepper, to taste
- 2 tbsp minced fresh parsley

Method
Mix all ingredients together, adjust seasoning to taste. Best if chilled for at least an hour before serving. 6 servings.
