Spiced Beetroot Salad

Ingredients

  • 6 cooked beets, peeled and diced (best if roasted, but boiled is fine too)
  • juice of 1 lemon
  • 1 tbsp. olive oil
  • 1/2 tsp ground cummin
  • 1 tsp smoked paprika
  • 1/4 tsp cinnamon
  • salt and pepper, to taste
  • 2 tbsp minced fresh parsley

Method

Mix all ingredients together, adjust seasoning to taste. Best if chilled for at least an hour before serving. 6 servings.
