Buckwheat Patties

Ingredients

  • 1 cup cooked buckwheat
  • 3 cloves garlic
  • 1 tbsp finely diced onion
  • Egg replacer or ground flaxseed and water equal to one egg
  • 1 tsp dijon or whole grain mustard
  • dash cayenne pepper (optional)
  • 2 tsp smoked paprika
  • salt and pepper
  • bread crumbs

Method

1. Combine all ingredients except the bread crumbs in a large bowl.Add salt and pepper. It should be a bit sticky. If it is too dry, add a bit of water or more flavouring (e.g., tomato sauce, mustard, soy sauce).

2. Add the bread crumbs until the mixture sticks together enough to make patties. Form the mixture into patties in your hands. You can make them any size you want. I like them small, so I use about 1/4 cup of the mixture for each patty.

3. Heat a skillet over medium-high heat. If not using a nonstick skillet, add enough oil to cover the bottom of the pan.

4. Cook the patties until they are brown on each side. Serve as you would a veggie burger, over salad, or any way you want!
